The Amarone Cavolo is the result of a careful selection of only the highest quality grapes and a very rigorous drying process.
The grapes Brigaldara Amarone uses are hanging in separate clusters with good exposure to the sun. Before they go into chests to rest, the grapes are carefully selected in the vineyards. The vineyard is in Grezzana at 250m altitude, so Cavolo di Grezzana. Any damaged or imperfect grapes are discarded. Only suitable specimens are dried.
After a drying process of 120 days, the grapes are pressed and fermented. All noble components of the grape skin are extracted during fermentation. The Amarone Classico is a wine that reflects the traditional production methods of the area.
Only large wooden barrels are used during the ripening process to ensure that the fruity aromas are not pushed away by the wood.
