The ruby purple color of this wine releases an intense nose with generous aromas of black currant, fennel and tobacco. Carmin Brillant offers aromas with a lot of promise that will blossom even more with the years. The wine is full, strong, fleshy and structured. We prefer to drink it with the following dishes: Lamb and spring vegetables, Tournedos Rossini, veal saltimbocca with prosciutto, sweet potato and wild mushroom gratin, Brillat Savarin cheese with truffle and a French Opera Cake.
After several generations of producing one Vacqueyras, Henri Bungener started looking for three different Vacqueyras. Each cuvée has its own personality and requires separate work, both in the vineyard and in the cellar. It is from this discovery that the Fruit Sauvage, Carmin Brillant and Lao Muse cuvées were developed to make the most of these so specific terroirs.
Cuvée Carmin Brillant comes from vineyards on the side of the hill, facing south / southeast. The wine is made from 60% Grenache and 40% Syrah from vines aged 25 to 70 years. he grapes are picked by hand and sorted selectively for their quality. The fermentation is traditional with a natural fermentation with wild yeast. This is followed by a long maceration, for 1-2 months. The maturation takes 20 months, more than half of which in oak from 1 year old barrels.
