Description
The dark ruby ​​red color of this cuvée exudes scents of fresh cassis and sweet herbs. The taste develops this aromatic palette covered with very present tannins, but already well melted, silky and elegant. This wine is delicious to combine with the following dishes: Pork ribs with mustard and honey crust, John Dory with a chorizo ​​crust and espelette pepper sauce, tuna steak with pepper crust and, for example, cheeses such as Comté and Crottin de chavignol.
 
After several generations of producing one Vacqueyras, Henri Bungener started looking for three different Vacqueyras. Each cuvée has its own personality and requires separate work, both in the vineyard and in the cellar. It is from this discovery that the Fruit Sauvage, Carmin Brillant and Lao Muse cuvées were developed to make the most of these so specific terroirs.

Cuvée Fruit Sauvage is located at the bottom of the slope, around the clos at an altitude of 250m in a protected nature reserve, with 30 cm of alluvium from above; oriented to the south / southeast. The wine is made from 60% Grenache and 40% Syrah, from vines aged 10 to 45 years. The grapes are picked by hand and sorted selectively for their quality. The fermentation is traditional with a natural fermentation with wild yeast. This is followed by a long maceration, for 1-2 months. The wine is aged for 12 months: half in large mild oak barrels, the other half in cement barrels.
