Description

This Cuvée Les Ormeaux 2015 consists of 75% Merlot and 25% Cabernet Franc. On the nose it is floral with some mineral notes, wild berries and red fruits with a discreet hint of oak. The taste is soft and supple, fruity and with a young fresh acidity. The tannins are juicy and velvety in texture. It is a wine that shines through its elegance and finesse with a beautiful long finish. Cuvée Les Ormeaux is best served at a temperature of 16 ° C. The wine goes perfectly with the following dishes: Veal in a herb crust, candied lamb shoulder and duck breast baked with cherry sauce.

Merlot and Cabernet-Franc make up this cuvée. And it is not without reason that these two precocious grape varieties thrive in the cool soils of Côtes-de-Castillon. It can produce elegant, fresh and deliciously fruity wines. To maintain this character, Thierry Valette turned to a low temperature vinification favoring the fruity and floral notes. The wine was then aged in inert containers (cement) and in barrels of 2 to 3 wines that do not impart woody flavors but structure. When tasting, the wine presents a juicy, spicy and velvety taste. If it is already pleasant today, after 8 years of aging it will surprise you with its complexity.

The terroir is distinctive, 80% of the estate is on a plateau, characterized by a thin layer of the hardest type of limestone known locally as calcaire à astéries. This limestone species takes its name from the countless fossils of Asteria, an organism related to starfish, hence the star on the labels of the wines of Puy Arnaud. The remaining 20% ​​is on the slopes below the plateau. The vineyards are located at an altitude between 75 and 100 meters with a remarkable microclimate, which gives very good ventilation and with a lot of sunlight.
