Description
La Jefa has a straw yellow color. The scent is very complex, aromas of vanilla and ripe stone fruit stand out first. These are complemented by light nuances of anise, harmonized by the aging in barrels. The scent has a slightly sweet character and a great diversity of nuances. It is a mouth-filling, silky-smooth wine, wonderfully creamy and very pleasant. At the same time, it has good acidity, resulting in a very balanced and elegant wine. Very pleasant on the palate, where a fine texture stands out, which increases complexity and richness.
 
2018 was a very wet year in Toro, especially in the spring, with temperatures lower than normal. Thanks to the heat in the final stage of ripening, the grapes arrived at the winery with excellent quality. This results in a lighter and finer wine due to the cool periods that year.
 
La Jefa is made from Malvasía. There are hardly any vineyards where this white grape is predominant in DO Toro. That is why La Jefa comes from a selection of a large number of white vines that are found alternately in old red grape vineyards (from 50 to 150 years old). The vines settle on sandy soils with high granite stony soils and are grown naturally according to tradition. The harvest started on September 24 and was carried out manually. Minimal intervention is applied in winemaking. Spontaneous fermentation with native yeasts takes place in new 600 liter French oak barrels, where it remains in contact with the lees.
 
Aging: 14 months in new 600L French oak "bocoyes" (large barrels), lightly toasted.
