This Chardonnay from Las Niñas is crispy and fresh. It has beautiful orange blossom aromas that go together with some herbs and summer fruit. The taste is full, round with a delicious natural acidity and a pleasant aftertaste. It will do well with minnows like sea bass. He can also go well with a pan of mussels that are often eaten with sauce, so the creaminess of the wine comes in handy. But he also has a nice sweetness that would accompany a tomato sauce, for example a lasagna.
In 1996 Bernard Dauré persuaded his friends, Jean Pierre Cayard and Claude Florensa, to come up with a crazy idea and join him in creating a wine estate in Apalta, Chile. The girls of the three families soon fell in love with the country, in the Colchagua Valley, which is just a two-hour drive south of Santiago, the country's capital.
The girls, "Las Niñas", took over the work, which lasted about three years ... and planted 160 hectares of Cabernet Sauvignon, Camenere, Syrah, Mourvedre, Grenache Noir, Merlot and Chardonnay, while Mathias Klotz designed the basement and built.
The Las Niñas vineyard has solid roots in Apalta and with each passing day, they question the modernity of the wines that are the fruit of this country. Organic production is a duty and the search for balance is renewed every year during the vintage. The freshness of their wines testifies to their eternal youth.
The grapes are harvested by hand early in the morning to maintain all its freshness and natural acidity. As soon as they arrive at the winery, they are immediately pressed and alcoholic fermentation begins. At half of the vinification, part of the wine goes into French oak barrels. The wine ripens permanently on the lees to create a nice volume and to give the wine its potency. In addition, it matures in French oak for 8 months.
