A very well-made, young-tasting Mencia, who is a very pleasant companion of many kitchens due to the subtle use of wood.

-Pajaro Rojo is a young unbaked Mencia from mostly clay soils in the Bierzo valley. They used 5% full clusters and fermented with indigenous yeasts. The wine rested for a couple of months with the lees before being transferred to oak barrels for a short elevage of around six months. There are aromas of ripe black fruit intermixed with dark spices and some orange peel, giving an overall feeling of ripeness with freshness. The palate shows great intensity of flavors and power with balance. A very good, young and powerful Mencia
