This Côtes du Rhône Clairette is golden in color with a green sparkle. The wine has a beautifully complex vanilla nose with further aromas of dried fruit. It has a slightly toasty and smoky touch with a nice elegance. On the palate it is powerful and sophisticated and has a lingering finish. This cuvee presents the clairette in its original form, with expressions of delicious fruits and freshness. This wine goes perfectly with dishes such as sweetbreads, stew, fish with creamy sauce and grilled or fried shellfish and with strong cheeses.
The grapes are picked by hand, the soaking takes 1 night after which the grapes are pressed in the early morning. The vinification is first started without yeast, which is only added later. The wine matures in 400L barrels for 6 to 8 months.
