Clos Puy Arnaud's Grand Vin consists of 60% Merlot, 35% Cabernet Franc and 5% Cabernet Sauvignon. It is pure and floral on the nose with some mineral notes, fresh wild berries, dark fruit white pepper, mint and violets. The taste mixes cassis with dark plums and gives a bright acidity. Silky smooth, perfumed and well-balanced with juicy black cherries and raspberries. It is a powerful wine with a deep and intense mouthfeel. The wine will benefit from airing in a carafe before serving.
The completely intact grapes are poured into barrels only by gravity. The maceration and pre-fermentation are carried out at low temperatures, by introducing an inert gas into the vats. These barrels consist of 50% oak and 50% cement. Fermentation takes place with the help of native yeasts and the temperature is limited to less than 25 ° C. The wine is aged for about 7 months in oak barrels of 25% new and 75% 1 and 2 years old.
The terroir is distinctive, 80% of the estate is on a plateau, characterized by a thin layer of the hardest type of limestone known locally as calcaire à astéries. This limestone species takes its name from the countless fossils of Asteria, an organism related to starfish, hence the star on the labels of the wines of Puy Arnaud. The remaining 20% is on the slopes below the plateau. The vineyards are located at an altitude between 75 and 100 meters with a remarkable microclimate, which gives very good ventilation and with a lot of sunlight.
