This Pinot Noir is crafted in an elegant, appealing style that can be enjoyed young, but also benefits from a bit of basement space, allowing it to develop more complex characters.
It has aromas of fragrant flowers, red cherry, strawberry and raspberry. A complex nose with earthy forest floor, savory and spicy notes. French oak gives this fruity Pinot Noir a subtle structure with a nice persistent finish. Delicious with fried salmon, roast poultry or mushrooms.
The bunches of grapes are selected and harvested by hand to maximize flavors and fruit quality. The grape is crushed and stemmed and transferred to open fermenters. After a period of 4 days of cold maceration, the juice is inoculated for fermentation. The fermented juice is then transferred to French oak barrels, 10% new, for maturation and to wait for secondary fermentation in the spring before bottling in the New Year.
The soil and vines are fed organic brews and compost tea. Disease is managed with natural beneficial organisms such as Trichoderma and Bacilus Subtilus that surpass unwanted organisms. This lush green vineyard creates an attractive habitat for a variety of native birds, lizards, butterflies such as the Monarch and the Admiral, plus beneficial insects such as ladybugs.
