No interventions, no clearance with bentonite, but work with own yeast cells. First there is the indulgence of the grapes, then slow fermentation of 8 -10 months on barriques. Possibly malo, the lactic acid fermentation. Sometimes happens, sometimes not, in short: wine making very precisely. This is clearly reflected in the Pinot Blanc.
