The grapes for this wine come from old vines on a hill with an east-south exposure called "Les Coudraies". The grapes are harvested when they reach full maturity and are on the verge of overripe. Then they are gently pressed for 3 hours. The must with an alcohol content of about 12.5 is then transferred to oak barrels for spontaneous fermentation at a temperature of about 14 ° C. The trick is to find the right balance between the alcohol content, the acidity and the residual sugars, but in our opinion it certainly worked!
Aging potential: 25 years or longer in the basement.
This small domain is located on the famous steep slopes of the Vouvray region, just north of the majestic Loire River. Producing small amounts of exquisite white wine from very old Chenin Blanc vines, their soils are full of flint and flint - tiny million-year-old sea fossils, dating back to a time when the sea covered this part of northern France. The soils now provide perfect drainage in this cool, wet region. Domaine d'Orfeuilles was founded in 1947 by Paul Herivault.
Now cultivated by Bernard Herivault and his son, this vineyard is committed to proudly preserving the traditions of cultivation and production of their vines, resulting in tight but creamy viscous wines that display an abundance of qualities of fresh lime and fennel seeds to dry savory "flinty" tones.
