The color of this Sauvignon Blanc is clear and has a fresh yellow color with green sparkles. He has a medium intensity nose. We find tropical aromas, but lemon is also clearly present. We find his anise background striking. On the palate it has the taste of ripe fruit and is well balanced with a fresh acidity. It is easy to drink with a strong fruity character. It is delicious with rice, seafood and light cheeses. We recommend drinking this wine within 2 years after bottling. The ideal serving temperature is 8 ° C.

Sauvignon Blanc is mainly grown in France, Chile and California. It is also found in Spain (Rueda and Penedés D.O.). Seeing how well the Verdejo variety had adapted in the production area at Cueva del Chamán, they decided to move on to plant Sauvignon Blanc, with fantastic results. This grape variety has small, very compact and uniform bunches, so that the grapes are usually deformed by mutual pressure and have very short stems. The Sauvignon Blanc grape variety provides us with sour must, with flavors of green fruit, grass and leaves, reminiscent of currants, elderberries, mushrooms and flowers. This allows them to produce white, dry, elegant and balanced wines here, with aromas clearly present in the early years.

The grapes are mechanically harvested and carried out at night to avoid the high temperatures and light, so that the grape must can be protected from oxidation. The fermentation temperature is around 13 ° C. That low temperature produces a larger amount of aromas. After fermentation, the wine is kept for three months with the lie (on the lees), after which "bâttonage" is applied every week to obtain a more structured and silky wine, which makes it more persistent on the palate.
