Description
This Chablis 1er Cru Montmains has a beautiful light gold look. The fragrance is intense with mineral notes. High acids balanced with a light minerality. This is followed by a long finish that feels pure and fresh.
The grapes, to produce Chablis 1er Cru Montmains, are harvested when fully ripe and fermented with natural yeasts in stainless steel vats. Here the wine is aged for 9 months. The use of stainless steel preserves the purity and the fruit and thus the characteristics of the 1er Cru Montmains terroir are brought out beautifully. During the vinification, limited use is made of sulfur and the wine is lightly filtered before bottling.
Montmains is a Premier Cru vineyard in Chablis, which extends down a hill southwest of the town of Chablis itself. It is known for producing fresh, elegant wines with good minerality. Philippe Goulley believes in the ethos of organic viticulture and that of minimal intervention; all its vineyards are organically grown. The vines trained by Double Guyot have an average age of 45 years and are grown on soils rich in clay and limestone with fossilized shells (fossils). Philippe believes in emphasizing terroir and he produces his wines in an unparalleled style, allowing them to reveal that in soil purity, minerality and vitality.
