Cuvée l'Oel du Temps is almost black in color with ruby red reflections. The wine has a beautiful, complex nose with aromas of hawthorn, liquorice, black currant and black fruit in balance with notes of aging. The spacious, concentrated and silky smooth mouth offers a nice fruity substance. It is refined and concentrated with smooth tannins, minerals and has a strong intensity that leads to a nice long finish.
The grapes are harvested manually, after which the grapes are placed on the sorting table and completely destemmed. Fermentation takes place in wooden barrels for 4 weeks. The wine then ages further in 1 and 2 year old oak barrels. The wine is bottled manually.
