We make the blend for this Viognier ourselves every year. We can also note that there are small differences between the vintages, so nature is leading.
This viognier comes from various vineyards within the Languedoc and Roussillon. Because of this, the specific properties of these vineyards are reflected in the wine. The upper valley of the Aude shows similarities with the northern Rhône valley, where the Viognier grape produces great wines. The climate is sunny, coolness and rain are present due to the proximity of the Cevennes and the Pyrenees. The grapes grow partly on calcareous soil and partly on clay and pebbles between 150 and 200 meters in height, this ensures coolness during the nights, and therefore freshness in the wine.
The harvest & vinification
The viognier grapes are harvested day and day to preserve the freshness of the wine. Upon arrival in the cellars, the fermentation takes place on stainless steel tanks after pneumatic pressing. Contact with oxygen is avoided to guarantee its freshness and purity.
