This Faugeres Blanc has a very beautiful pale yellow color, shines and is of good intensity. In the scent it is fresh, aromatic and fine. On the palate, the aromas are released from peach and white flowers. It is a fleshy and round wine with a hint of honey in the aftertaste. This wine will accompany your salmon or tuna starters. It is classic in combination with fried scallops, a fresh salad with prawns or poultry in a creamy sauce.
The Faugères appellation is defined by its slate soil, which is the result of numerous geological movements, some of which date back to the primary era. Deposits of clay and sand that had accumulated over millions of years at the bottom of the sea bounded by a mountain were compressed and brought to extremes of temperature to form these slate in mille feuilles.
Shale, the terroir of the Faugères Blanc, is a siliceous rock, rich in aluminum and iron. The color varies from blue (slate) to red (iron slate) but is more often brown-green or beige. Shale contains up to 40% of its water volume, while deeper cracks in the rock allow roots to seek out the moisture they need far away. Shale absorbs and stores heat (almost twice as much as limestone), which it releases slowly. Hence, the saying spread among winegrowers that grapes ripen at night.
