Amarone Case Vecie is made from grapes grown in Case vecie (7.5 ha) and Cavolo (1.5 ha). These vineyards are close to the village of Grezzana and are selected for their distinctive microclimate and soil composition. The height of the vineyard and the height of the land allow the grapes to ripen slowly.
The vines are bound in Guyot style and give the vines a good balance between foliage and fruit. The grapes are later harvested than the other vineyards, allowing the grapes to rest during the cooler part of the year. The grape drying process is slower and longer than for other grapes. During the drying period the grapes have time to develop the characteristic aromas that are then extracted in the wine during fermentation.
Due to the low temperature of the drying process, the characteristics of this cold climate vineyard can be found in the Amarone Case Vecie.
The wine ripens 2 years in Barrique and 3 years in 25HL Slovenian oak.
