Exceptional terroir and the reference within the Cahors designation of origin: two gently sloping hills, one of which has a particularly stony and pebbly lime soil (for its finesse) and the other is dotted with thick boulders like in Châteauneuf-du-Pape that provides strength and concentration. .
The grapes are completely destemmed upon arrival in the vinification room. This is followed by a soaking period of 30 days during which the 'hat' is immersed daily. During fermentation, the temperature does not exceed 28 degrees C. Aging for 12 months on 1 and 2 times previously used oak.
