Description

Château du Cèdre is a pure wine, pure but attractive at the same time. It expresses the richness and depth of Malbec from Cahors with joy and enthusiasm through a medium-bodied and expressive taste, with crunchy tannins, vibrant freshness and attractive roundness. The bouquet, characterized by black fruits, spices, mint and some fresh peppers, evolves and grows gradually, giving the wine length and finesse. A charming Cahors and an excellent companion for your meals. This wine has great aromatic power and goes perfectly with local dishes from the Cahors such as confit de canard and cassoulet.

The vines of Château du Cèdre are rooted in two different soils: The terroirs, composed of stony clay and limestone, yield pure wines with fine tannins, while more powerful and concentrated wines come from soils composed of clay, sand and rich in pebbles .

According to the brother of the winemaker Jean-Marc, it was "Un millésime comme on en rêve", a dream year. Something that has become rare in recent years. Spring started cool and wet and suddenly changed his mind just before the vines bloom, bringing in more sunshine and pleasant temperatures. These ideal weather conditions lasted until autumn, interrupted only by some beneficial rains in July and August, while the beautiful September brought the grapes to full maturity. A "stress-free" harvest started on Wednesday, October 5, 2016.

The harvest is sorted in the vineyards and destemmed on arrival in the cellar. 30 days of maceration with daily battonage of the peel at the beginning of the fermentation. The fermentation temperature does not exceed 28 ° C. Malolactic fermentation is carried out in oak barrels.

Aging: Aging between 20 and 22 months in new oak and in old barrels that are used once or twice.

Storage potential: At least up to 10 years after harvest if properly stored.
