The grapes are harvested entirely by hand, after which they go to the sorting table to steal and remove the leaf remnants. This is followed by a fermentation between 25 and 30 days at a temperature of 28 to 32 degrees. The wine ages 15 to 24 months in concrete cuves. at least 8 years.
